Spring Rolls for Lunch

Here's a yummy way to have a healthy lunch without all the carbs. Spring Roll wrappers consist of rice flour, water and salt. Simply moisten the wrapper, fill it and wrap. It sticks to itself making a pretty secure package.

Mine is filled with lettuce, salmon, black olives and pickled asparagus. The dipping sauce is just mustard and hot sauce. Yum.
